Cracked Glacier

Cacao Chia Pudding with Pistachios and Banana

Servings: 1

 

Ingredients:

  • 3 tbsp chai seeds

  • ½ tbsp cacao powder

  • ¾ cup non-dairy milk

  • Dash of cinnamon

  • 2 drops vanilla extract

  • 1 tbsp pistachios

  • ½ banana, sliced

Directions: 

In a mason jar or small container all chia seeds, cacao powder, mild, cinnamon, and vanilla extract. Cover and let sit in the refrigerator overnight. The next day, stir and possibly add mild depending on desired consistency. Top with pistachios and sliced banana before serving.

Overnight Almond Butter Cinnamon Oats

Prep Time: 5 minutes

Cook Time: N/A

Servings: 1

 

Ingredients:

  • ½ cup non-dairy milk

  • 2 tbsp almond butter

  • ¼ tsp cinnamon

  • ½ tbsp ground flaxseed 

  • ½ tbsp maple syrup

  • ½ cup rolled oats 

  • Handful of blueberries and raspberries

Directions: 

In a mason jar or small container mix all ingredients together except for the berries. Cover and leave in the refrigerator overnight. The next day mix again to assure the almond butter is mixed through and serve topped with berries.

Egg Bake

Prep Time: 5-8 minutes

Cook Time: 30 minutes

Servings: 6-8

 

Ingredients:

  • 12 eggs, beaten

  • 1/4 cup whole milk or coconut milk

  • 1/2 cup kalamata olives

  • 1 cup spinach

  • 1/2 cup feta

  • 1 tsp dried oregano

  • 1 tsp garlic powder

  • 1tsp dried basil

  • Sea salt and pepper to taste

Directions: 

Preheat oven to 375 degrees. Beat the eggs with 1/4 cup milk. Stir in all other ingredients. With a small amount of oil or butter coat the edges of an 8 x 11 glass baking dish. Pour egg mixture into baking dish. Cook for 30 minutes. Serve warm.

Berry Spinach Coconut Smoothie

Ingredients:

  • ½ cup frozen blueberries or raspberries

  • 1 cup strawberries

  • ¼ cup coconut cream

  • ½ cup coconut milk

  • 1 tbsp hemp protein powder (plain or chocolate) 

  • ¼ cup fresh spinach

Chia Pudding

Directions: 

Add all ingredients to a blender and blend until preferred consistency

Morning Quinoa Bowl

Ingredients:

  • Ingredients:

  • 1/2 cup quinoa, cooked

  • ¼ cup coconut milk from a can

  • ½ tbsp honey (optional)

  • 1 tbsp ground flaxseed

  • 1 tbsp hemp seeds

  • 1 tbsp pumpkin seeds

  • ¼ cup diced Mango

  • Handful of blueberries

  • Handful of raspberries

  • 1/2 kiwi, sliced

Acai Bowl

Directions:

Place quinoa in a bowl and pour coconut milk over evenly. Drizzle with honey and top with all other ingredients.

Ingredients: 

  • 12 eggs

  • ¼ cup coconut cream

  • 1 cup broccoli, chopped

  • ½ cup onions, chopped

  • ½ parmesan, shredded

  • 1 tbsp garlic, minced

  • Sea salt and pepper to taste 

  • Coconut oil

Directions:

Preheat oven to 350 degrees F. In a bowl whisk together the eggs, garlic, salt, and pepper.  Stir in the broccoli, onions, and parmesan. Using coconut oil, coat an 8 x 11 inch glass baking dish. Pour egg mixture into the dish and bake for 25 minutes. Let cool for 5 minutes before serving.

Almond Flour Pancakes

Prep Time: 5 minutes

Cook Time: 10-20 minutes 

Servings: 4

 

Ingredients:

  • 2 cups almond flour

  • 4 eggs, whisked 

  • 1 tsp vanilla extract

  • 1 tsp baking powder

  • ½ tsp cinnamon

  • 3 tbsp coconut oil, melted

  • 2 tbsp maple syrup 

  • 1 tbsp ghee or coconut oil to cook

  • Handful of berries

Directions:

Mix all ingredients together in a large bowl leaving some texture to the mixture. Heat a small amount of ghee or coconut oil in a skillet over medium heat. Add approximately ¼ cup of mixture to the skillet. You can cook multiple pancakes at once depending on size of skillet. Once you see some bubbles forming in the mixture, flip your pancakes and cook for 3-5 minutes on the other side, until cooked through. Serve topped with berries.
